Ode to Butter

Since the earliest civilizations
Its creamy color has blessed our plates
By mankind’s machinations
Eons later, it still our hunger sates
Ah butter, rich and creamy spread
You enrich my food with delight
Life without is a horror best left unsaid
And I daren’t go quietly into that night
You make my toast most delightful
Moisten the cinnamon rolls I bake
Fudge without you would be frightful
As would so many other things we make
Truly butter seems a wonder now
So odd that it’s made from milk of cow
Yet emulsified though heavy beating
So that to our appetites it is entreating
